With more than 30 years of experience in the culinary field, Svante built his career searching for high-quality ingredients and sourcing specialty meats around the globe for chefs and fine-dining restaurants. He founded Herd & Grace to make those products more accessible to home cooks, offering a selection that includes Australian and American Wagyu, grass-fed beef, lamb, seafood and other specialty proteins. The company also operates a retail butcher shop in Los Angeles and ships nationwide.
They discussed what sets premium meat apart, how consumers can better understand Wagyu, marbling and different cuts, and what to consider when deciding whether a more expensive steak is worth the investment.
